Mix
Bisquick, bran & sugar. Gently fold in blueberries. Add egg &
milk, mix gently but thoroughly. Prepare pie plate by spraying
with Pam and then melting 1/2 stick butter in microwave for 30
seconds. Pour pancake mixture into buttered pie plate and bake
in pre-heated 475 degree oven for 15 minutes. Cut into 4
quarters, prepare serving plate with a drizzle of Blueberry
Glaze, set 1/4 of pie in middle of glaze, dust with
confectioner's sugar, top with strawberry and mint and scatter
fresh blueberries on top if available.
The
Glaze: Stir the pineapple juice, blueberries, sugar and 1/2 cup
of the water into a saucepan. Stir the corn starch into the
reserved 1/2 cup of cold water. Bring contents of saucepan to a
boil, add the corn starch mixture to the saucepan and stir until
the mixture thickens. Use the glaze as a drizzle on the plate or
as a topping on the pancake. 4 Servings.
